Why? Mother's is probably the benchmark Standard for Cajun food in the State of Louisianna. Mother's is as close as you can get to someone's coonazz grandma out in the Bayou. The Redbeans and Rice are as authentic as you can get. The gumo is the ultimate without being pretentious.
